Make your Onam Feast more special with this Kerala-style Ripe Mango Curry, which is traditionally called Mambazha Pulissery. It is sweet, spicy, and full of flavour. Kerala-style Ripe Mango Curry is prepared with fresh and juicy Mangoes, Jaggery, Coconut paste, and a few Indian Spices. It is then tempered with a few ingredients, that take the taste of this curry a level higher. MAMBAZHA PULISSERY 👉Ingredients Ripe Mangoes-4 Yogurt- 1/2 kg Salt-1/3 tsp Turmeric Powder-1/2tsp Red Chilli Powder-1/2tsp Jagerry-1 small piece Water-2 glasses 👉For Grind Grated Coconut-1 cup Cumin Seeds-1tsp Green Chilli-2 Water-100ml 👉For Season Coconut Oil-1tbs Mustard Seeds-1/2tsp Fenugreek Seeds-1/2tsp Dry Red Chilli-3 Curry Leaves-3 strings Preparation --------------- Peel Off the Mangoes. Keep aside. Blend Yogurt in a mixer jar & keep aside. To a heavy bottomed pan, add Turmeric Powder, Chilli Powder, Salt & Jagerry. Mix well. Add Mangoes & Close with a lod, cook for 10 minutes in medium flame. Stir occasionally. When the Mangoes cooked well, add Coconut Paste, mix well & Cook for 3 minutes or till the raw smell goes. Add Yogurt & mix well in low flame. Do not Boil after adding Yogurt, just heat it & switch off the flame. Season with Mustard Seeds, Fenugreek Seeds, Dry Red Chilli & Curry Leaves. Notes ------- 👉 I made this Mambazha Pulissery using the wild Mangoes that are easily available in South India. These mangoes are small in size with thick green skin but are super juicy and fibrous. In case you don’t have access to these mangoes, go ahead and use any ripe Mangoes. 👉 You can add Ginger & Shallots if you like it. 👉Select mangoes that are free of soft patches and black marks.They should also smell Sweet and Fruity. 👉* Jaggery – Jaggery is added to give a little hint of sweetness to the dish, which compliments the mango and spicy coconut paste so well. Yogurt – This makes the dish creamier and also its cooling properties make this curry even more apt for hot days. Spices – We will need minimal everyday spices for this curry such as Turmeric Powder, Kashmiri Red Chili Powder, and Salt. 👉 your mangoes are very big in size, you can chop them into big pieces and add them to the curry. But if they are smaller in size, I prefer to add them as a whole. 👉I'll recommend you make this curry fresh, but if you have leftovers you can store it for about a day or two in the refrigerator. Make sure to store it properly in a sealed container and reheat until warm before serving. 2. BUTTERMILK CURRY ------------------------------------- Ingredients Yogurt-1 kg Water-2 cups Coconut Oil-1tbs Mustard Seeds-1/2tsp Fenugreek Seeds-1/2tsp Cumin Seeds-1/4tsp Hing Powder-1/2tsp Chilli Powder-1/4 tsp Turmeric Powder-1/4 tsp Fenugreek Powder-1/4 tsp Green Chilli-3 Shallots-4 Ginger-1 small piece Garlic-2 small pieces Salt-1/2 tsp Dry Red Chilli-2 Curry Leaves-2 Strings Preparation --------------- Blend the Yogurt by adding 1 cup of Water. To the Coconut Oil saute Green Chilli, Ginger, Garlic & Shallots. Add Turmeric Powder, Red Chilli Powder, Fenugreek Powder & Hing Powder. Saute till the raw smell goes. Add Buttermilk & mix well. Do not boil. Just heat it & switch off the flame. Add Salt & Mix well. Season with Mustard Seeds, Fenugreek Seeds, Cumin Seeds, Dry Red Chillies & Curry Leaves. Notes -------- 👉 You can avoid Ginger/Garlic if you don't like it. 👉 Red Chilli Powder & Cumin Seeds are optional.
