LOW-CARB ALMOND FLOUR BANANA MUFFINS RECIPE · 3 large ripe bananas with brown spots · 3 large eggs · 3 tb melted butter · 1 tsp pure vanilla extract · 1 tsp cinnamon · 1 tsp baking soda · 1/2 tsp baking powder · 1/4 tsp salt · 3 cups almond flour · 1/4 cup dark chocolate chips (optional) · Cooking spray I use Avocado Spray TOPPING (optional) · 1 tsp cinnamon · 1tsp Golden MonkFruit Sweetener · Honey Completely ready to go…. Gluten free, low-carb, keto, moist, delicious, easy to make in a blender, banana muffins in under 30 minutes! Instructions 1. Preheat your oven to 350 degrees F and spray muffin tin with cooking avocado spray. 2. Use blender or food processor, add bananas, eggs, butter, vanilla, cinnamon, baking soda, baking powder, and salt and process until smooth. 3. Add almond flour and combine on low, pausing to scrape the walls and process again to be sure the batter is well mixed. 4. Add chocolate chips and stir. 5. Using an ice cream scooper, divide batter into 12 and drop into your prepared muffin tin. 6. Bake for 16-18 minutes, or until golden brown and toothpick inserted comes out clean. 7. Remove muffins from the oven, let cool 10 minutes, and enjoy. 8. Optional – Drizzle with honey and a mixture of cinnamon and Golden MonkFruit Sweetener Notes Store: Muffins may be stored at room temperature for 2-3 days or in your refrigerator for up to 5-7 days. Since moist, a loosely covering is best. Freeze: Muffins will freeze up to 3 months in a large freezer bag. You may insert parchment paper in between the muffins to keep them from sticking together. Over ripe bananas ONLY If your batter is too thick, this can mean that your bananas were not ripe enough.
