Some dishes in Pakistani cuisine are so well-known that they hardly need to be described at all. Biryani, Pilau, and Korma are all dishes that speak for their own. A good mutton Karahi is also included in this elite group of dishes. Mutton Karahi is a dish that can be found on the menus of dhabbas and restaurants all over Pakistan, and it is often served on special occasions and at get-togethers. It is the epitome of traditional Pakistani cuisine. A variation on the Chicken Karahi recipe, this dish is the red meat equivalent that is equally as popular (and perhaps even preferred) by many people. The Karahi recipe I'm sharing today is for both lamb and mutton, and it's a delicious combination. I've grouped them together because they're both very similar meats, with the only methodological difference being the amount of time they need to be cooked. Lamb, I've discovered, is cooked more frequently in the United Kingdom than mutton, despite the fact that mutton is the preferred red meat in Pakistan. To be completely honest, I have no idea what is going on in other countries (you can let me know in the comments if you have any input here). I believe it is safe to address both issues in a single recipe. There are very few Karahi recipes available online that do not include the use of onions or yoghurt. In order to cater to the many different dhabas and restaurants where it is served, the traditional Karahi has been modified over the years, primarily in order to make it more affordable by bulking up the masala with onions, which are significantly less expensive than tomatoes. As a result, most people have incorporated onions into their home-cooked Karahi recipes without realising that this is not the traditional way of preparing the dish. Of course, the addition of onions to the masala changes the flavour and texture of the dish. The real deal, authentic flavour, and real awe-inspiring results are achieved when the masala is prepared according to tradition, with a heavy hand on the ginger and garlic and plenty of tomatoes! For those who are unsure whether a curry made without onions will be sufficient or even work, I am here to assure you...
