Perfect for any barbecue or as a side dish for many other dishes. ---------------------------------------------------------------------------------------------------------------------------------------------------- Recipe of the week: (for 2 persons) approx. 600 g salad potatoes (cooked) 1 medium onion 2 tbsp. vinegar 120 ml beef broth some parsley or chives (or both) 3 to 4 tbsp. sunflower oil pinch of salt and pepper Wash the potatoes and boil them with their skins until they are soft. Potatoes are done when you can easily pierce them with a fork. Leave to cool. You can also use boiled potatoes from the day before. Peel the cooked potatoes and cut them into thin slices. Then finely dice the onion and add to the potatoes in the bowl. Add the vinegar to the hot beef broth and spread evenly over the potatoes. Add a pinch of salt and pepper. Chop the parsley/chives and add them to the bowl as well. Mix through, then cover and let the potato salad steep for 15 minutes.
