Sauté onions: Heat oil/ghee in a pan. Add cumin seeds and bay leaf. When they splutter, add onions and sauté until golden brown. 2. Add base: Mix in ginger-garlic paste and green chilli. Sauté for 1 minute until fragrant. 3. Add tomatoes: Add tomato puree and cook until oil separates (about 5–7 minutes). 4. Add spices: Stir in turmeric, coriander, red chilli, and cumin powders. Cook for a minute on low flame. 5. Add mushrooms & peas: Toss in the sliced mushrooms and peas. Stir well so they absorb the masala. Cover and cook for 5–6 minutes, stirring occasionally. 6. Add water: Add ½–1 cup warm water depending on the consistency you prefer. Cover and simmer for 10 minutes until peas are soft. 7. Finish: Sprinkle garam masala and stir in cream (if using).
