You want an *overabundance here — the goal is deep black “bat wings.” Add just a sprinkle of your favorite BBQ rub for a little extra flavor. 3. *Rest:* Lay the seasoned wings out on a board and let them rest for about *30 minutes* while you fire up the grill. 4. *Preheat the Grill:* Get your grill running between **400–500°F**. You’ll be cooking **indirect**, meaning not directly over the flame or fire pot if using a pellet grill. 5. *Cook (Indirect):* Place the wings on the grill, away from the direct heat, and cook for **20 minutes**. 6. *Finish with Flame:* After 20 minutes, remove the wings and crank your pit to **high heat**.
