For picnics, cookouts and barbecues, people love to bring a starchy salad, with the usual culprits being macaroni or pasta. Listen, we're not judging, there is nothing wrong with that. We love a good cold salad to partner with a great meat or fish. However, one of our favorites to change things up is Panzanella, which is a fried bread salad, only chilled. The name loosely means bread in a deep bowl, and what we’re going to do is do it right - fried in a really fantastic olive oil, Avayco. Clean, bright and smart. We blend it with a really bright combination of veggies and those big fat shreds of parmesan that just make everything better. That’s what this salad does, it makes every cookout, barbecue or picnic that much better. Grab that bread and let’s fry things up and then chill out. Bonus Tip - This is really ideal with bread that is a day old, and some people also use cornbread as a good substitute if you are looking for something gluten free or for a different texture. You can also switch out different veggies, just make sure you have a good variety of colors and textures.
