This Lauki ke Gatte ki Sabji is a traditional Rajasthani recipe. Grated bottle gourd is mixed with spices, besan and a little paneer and kneaded to a dough from which gatte is made. This Lauki ke Gatte ki Sabji is definitely healthier than lauki ke kofte as it is not fried but boiled. The gravy enriched with yoghurt adds a tangy flavour to the curry that makes it delightful and also helps to cut down on the heat of the red chilies. Recipe: Lauki ke Gatte ki Sabji Preparation time: 20 minutes Cooking Time: 20 minutes Serves: 3-4 Ingredients: For the gatte: 600g lauki (bottle gourd) ½ tsp cumin seeds ½ tsp pepper corns ½ tsp coriander seeds A pinch carom seeds ½ tsp salt ½ tsp red chili powder 1 tsp kasuri methi 1 tbsp oil 50g paneer For the curry: 2 tbsp oil ½ tsp mustard seeds 10-12 curry leaves 1 tbsp chopped ginger 1 tbsp chopped garlic 1 tsp chopped green chilies curry leaves 1 cup chopped onions ½ cup chopped tomatoes 1 cup yoghurt Salt to taste ½ tsp turmeric powder 1 tsp red chili powder 1 tsp coriander powder Chopped coriander Method: Peel and grate the bottle gourd. Squeeze the grated lauki in a muslin cloth to remove all moisture. Add all other ingredients and knead to a stiff dough. Sprinkle some besan on the board and roll out the dough into 1” thick rolls . Cook the gatte rolls in boiling water for 4-5 minutes till it is stiff. Remove and allow to cool completely. Heat oil in a pan. Add mustard seeds, ginger, garlic, green chilies, curry leaves and allow them to turn fragrant. Add the onions and sauté till golden. Add salt, the powdered spices and mix well. Add the tomatoes and sauté over low heat till the tomatoes are pulpy. Add the drained bottle gourd water, whisked yoghurt and stir continuously till the mixture comes to a boil. Add ½ cup water and the gatte and simmer for a few minutes.
