The curry is prepared in different ways according to the ingredients used. Today i am going to make kumblanga pulissery ( vellarikka pulissery) or cucumber pulissery. We can also make mampazha pulissery ( using ripe mango) , pineapple pulissery, ethakka pulissery (using plantain), chena pulissery ( using elephant foot yam )It can be made with or without coconut. Ingredients : Ash Gourd - 1/2 cup cut in small cubes 1 green chilli 1/2 tsp turmeric powder 1/4 tsp red chilli powder salt as per taste 1/4 glass water ( only enough water to cook ash gourd till it becomes tender) For Grinding : 1/2 cup coconut 4 shallots curry leaves 1 tsp jeera water to grind 1 cup little sour whisked curd For Tempering : 1 Tbsp Coconut Oil ( any oil can be used) 1/2 tsp mustard 2 dry red chilli curry leaves 8 shallots choppes If shallots not available, you can also use onion chopped.
