Time Stamps: 00:00 – Monday 05:00 - Tuesday 08:12- Wednesday 12:21 - Thursday 16:17 - Friday 19:12- Saturday Recipes: Monday Sweet Potato Oats: 1/3 cup oatmeal ½ Sweet Potato (baked) 1/3 cup dates 1 and ½ cup water or plant milk ½ teaspoon cinnamon Pinch of ginger powder, cloves and nutmeg 1-2 tablespoon ground flax seeds Mushroom Meal Prep Dish: 1 Tablespoon coconut oil 1 white onion 3 stalks celery 2 cups chopped mushroom 1 cup uncooked born rice 2.5 cups Water 1 Teaspoon Garlic powder 1 Teaspoon Thyme 1 Teaspoon Sage 2 tablespoon nutritional yeast 2 cups spinach 1 can chickpeas, rinsed Salt and Pepper to taste In a large pot heat coconut oil Add onion, celery and cook until soft Add mushrooms and cook down. Add spices and Nutritional yeast and cook for another 2 minutes Add brown rice, water and cook for 45 minutes In the last 2-3 minutes of cooking time add the spinach and chickpeas. Cranberry Bars:   / cw--jhzacs9   Tofu Scramble: Ingredients: 1/3 block firm tofu ½ small red onion Veggies of choice (I like to use red peppers, mushrooms, spinach) ½ teaspoon garlic powder ½ teaspoon turmeric ¼ teaspoon smoked paprika 1-2 tablespoon nutritional yeast 1 tablespoon tahini (do not skip, this makes it so creamy!!) Salt and pepper to taste Tuesday: Cashew Sauce: ½ cup raw cashews (soaked overnight) 2 tablespoon nutritional yeast 1 teaspoon apple cider vinegar ¼ teaspoon garlic powder 1/8 teaspoon smoked paprika ¼ teaspoon sea salt 3 Tablespoons water Pepper to taste Add ingredients to high-speed blender and blend until smooth. Wednesday: Oats: 1/2 cup oat 1 cup water ¼ cup dates large dates 1 teaspoon cinnamon 1/2 tablespoon maca powder 1-2 tablespoon group flax seed 1/8 teaspoon ground ginger 1 pinch nutmeg 1/8 teaspoon sea salt Chickpea pancakes: ½ cup chickpea flour 1 tablespoon nutritional yeast ¼ teaspoon garlic powder 1/8 teaspoon smoked paprika ¼ teaspoon baking powder 1/8 teaspoon sea salt Pepper to taste ¼ cup water 1 teaspoon apple cider vinegar Roasted/ cooked vegetables of choice Thursday: Pancakes: ½ cup oat flour 2 tablespoon ground flax seeds ½ tablespoon maca powder 1 teaspoon cinnamon 1/8 teaspoon salt ¼ teaspoon baking powder ¼ teaspoon baking powder 1 egg 1/3 cup plant milk ½ cup stewed apples Butternut squash soup: ½ large butternut squash 1 onion 1 small bulb of garlic 2 large carrots 2 stacks celery 3 bay leaves ½ teaspoon sage 1 teaspoon Cumin ½ teaspoon Cinnamon 1/8 teaspoon smoked paprika 1 tablespoon coconut aminos 1 teaspoon miso paste ¼ cup raw cashews ½ cup dry red lentils 1 tablespoon coconut oil 3 cups water or stalk Salt and pepper to taste Sautee onion, garlic, celery until soft Add 3 cups water or stalk. Add in squash, carrots, bay leaves, spices, coconut aminos, miso, cashews and lentils. Bring to a boil and simmer for 30 minutes, or until squash and carrots are tender. Transfer to blender and blend. I served my soup with tempeh croutons and sourdough bread.
