Directions: Cook thigh meat in oil (coat the bottom of the pan, avocado oil works best, but olive is fine) in dutch oven until cooked through. Then add carrots, celery, and onion (however much or little you like, people's tastes vary, and you should really choose what you like best here). Cook those through and then add two cups of water. Allow this to boil for another thirty to forty minutes. Now add in the cream. Allow it to come to boil and then stir. You will notice that it will begin to thicken on its own. Add is your seasonings and garlic at this point. Allow to simmer, stirring from time to time.If the soup is not as thick as you would like to be on its own, sprinkle in a very small (about 1/2 teaspoon) amount of xanthum gum over the boiling soup. Then stir it in. This will thicken the soup. At this point you can eat and enjoy. This Keto soup is brought to you by More Content Chefs, a new series produced by More Content Please.
