The Launcher's Missiles are annoying not because of the halving of a character's HP, but because of the Old status ailment being inflicted. You can remedy this by casting Esuna (for this you need a White Mage, since a Red Mage is not able to cast such spell). You want to destroy the Launchers as fast as possible. The BEST way is by using L5 Doom. If you don't have this spell, just use any thunder-based attacks. When the Launchers are destroyed, a 'countdown' initializes, and the Cannon shoots its Surge Beam. Bring HPs up after each Surge Beam, then attack the Cannon. Archer's Thunder Bow works great too.
