Idiyappam is easy to make. DO try our quick recipe and let us know the feedback, First Some tips Tip 1: Knead the dough at 2:25 when dough and water mix is hot, don't let it cool. Tip 2: Steam idiyappam for 7 to 8 mins or until they turn transparent Tip 3: If your dough is dry when you add in the press, idiyappam will be hard and if the dough is watery idiyappam will stick to each other. so the dough has to be perfect as shown in the video. Tip 4: Don't overcook the idiyappam else they become rubbery. Tip 5: Leftover Idiyappam can be stored covered with a wet cloth. Tip 6: Idiyappam can be frozen and used later as well. Now comes the recipe in words: ************* START of RECIPE ************* Take 2 cups of rice flour and dry roast it in a pan. Dry roast till the spoon easily moves in the flour. Flour becomes light and airy and raw smell will not be there. Do not brown. Once roasted transfer it in a bowl. Add salt to taste. Add hot water little by little. Apply oil to your palms and make a soft and smooth dough. Apply oil to the murukku maker and fill it with the dough. Apply oil to the plates as well. Make the swirls on the plates...Steam the idiyappam for 7 to 8 mins or till the idiyappam looks a little transparent. For the stew Dry roast 1/2 tsp jeera, 1 tsp coriander seeds and 3 dries red chilies...you can skip this step if you want the stew to be less spicy. Remove and powder it in a mixer. Heat 2 tsp of coconut oil. Put a small piece of cinnamon, 1 cardamom and 3 cloves...Add 2 cubed shallots. 1/2 tsp each of ginger and garlic. Saute well. Then add few curry leaves and 3 slit green chilies. Add 1 cup of mixed vegetables. We have used Carrots, Potatoes, Beans, and Peas. Add salt to taste and 1/2 turmeric. Mix well. Add the ground masala. Add 1/2 cup water and cover the pan. Once the veggies are cooked. Add 1 cup of coconut milk and bring it to a boil.
