King oyster mushroom and parsnip pie with cilantro chutney. We wanted to make a savory vegetarian pie this week as it's the perfect thing for the cold weather we've been having in the PNW. We went with earthy mushrooms and root vegetables paired with warm spices. It ended up being reminiscent of a very large samosa, and I'm not mad about it.
