These Banana Oat Cookies with Pecan and cosy coffee flavour are Chewy, Healthy, naturally sweet and packed with wholesome ingredients. They are gluten free, naturally sweetend , and perfect quick & easy healthy breakfast, snacking or meal prep. So easy, so delicious, and made in one bowl. Ingredients • 1 large ripe banana, mashed • 1 cup rolled oats • 1 cup almond flour • 1 tablespoon brewed coffee • 1 tablespoon honey or maple syrup • 2 tablespoons natural almond butter • 1 teaspoon cinnamon • Pinch of salt • 1 cup chopped pecans • 1 cup sugar free chocolate chips or raisins For Topping (optional): • A few extra chocolate chips • Pecan halves Instructions 1. Add the mashed banana to a bowl. 2. Mix in almond butter, honey or maple syrup, coffee, cinnamon and salt. 3. Add rolled oats, almond flour and shredded coconut if using. Mix until a sticky dough forms. 4. Fold in the chopped pecans and chocolate chips or raisins. 5. Cover the dough and chill for 1 hour or overnight for a chewier texture. 6. Preheat oven to 175°C (350°F). Line a baking tray with parchment. 7. Scoop the dough and shape into cookies. Flatten the tops slightly. 8. Add extra chocolate chips on top and press a pecan half in the centre. 9. Bake 12 to 14 minutes until the edges are lightly golden.
