CHICKEN AND WAFFLES WITH SRIRACHA MAPLE SYRUP LORI ROGERS/"CHEF LORIOUS" Saturday, May 8th - 5pm pst/8pm et Have you ever tried FRIED CHICKEN AND WAFFLES? If not you are missing one of America's most decadent and delicious combinations. I first tried them in Los Angeles at the world famous ROSCOE'S CHICKEN AND WAFFLES and became an instant convert. Lori Rogers, aka "CHEF LORIOUS" is the author of "CALIBAMA COOKING: Classic and Contemporary Comfort Food" and the key word in that title is COMFORT. She calls her kitchen her "Love Lab" and firmly believes that food is the key to comfort, community, and happiness. You are going to fall in love with her, as I did. Here is the recipe: Lorious Chicken & Waffles (Serves 6-8) Ingredients: 2 pounds chicken breast tenders Seasoning mix: combine 1 tablespoon each of salt, seasoned pepper, chili powder, Cajun seasoning, and cayenne pepper 2 cups buttermilk 1 egg 1/2 cup hot sauce Neutral oil, for frying (recommend peanut oil) Waffles or store-bought waffles (recipe below) Maple syrup, for serving For the seasoned flour: 1 cup all-purpose flour 1 teaspoon salt 1 tablespoon chili powder 2 tablespoons Cajun seasoning 1 teaspoon seasoned pepper 1 tablespoon cayenne pepper Directions Season chicken with seasoning mix. Be sure all pieces are thoroughly coated. (Seriously, don’t skimp on the seasoning. You don’t want your chicken to be boring. Show it some love, and just when you think you’re done seasoning the chicken, season it again!) In a medium bowl, combine buttermilk, egg, and hot sauce. Add chicken and let sit for 30 minutes or more. (If you can’t wait, that’s okay. The chicken will still be good even if it doesn’t marinate in the buttermilk.) In another medium bowl, combine ingredients for seasoned flour. In a deep skillet or stock pot, heat oil to about 350 degrees (I recommend peanut oil). Dredge each piece of chicken in seasoned flour. Add to skillet and fry 7–10 minutes, depending on thickness. Prepare the waffles—or, to save time, heat up store bought prepared waffles. Serve with Sriracha syrup, below. Equipment needed for fried chicken: Measuring spoons and cups Mixing bowls Deep skillet or stock pot Thermometer Spatula or tongs Spoons Waffles (makes 5 large waffles) Ingredients: 2 1/3 cups all-purpose flour 1/2 cup sugar 1 tablespoon baking powder 1 teaspoon baking soda 1 teaspoon salt 2 eggs, lightly beaten 4 tablespoons butter, melted 1 teaspoon vanilla 2 cups buttermilk Equipment needed for waffles: Measuring spoons and cups Two bowls Large spoon Waffle maker Directions: In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, combine eggs, butter, vanilla, and buttermilk. Combine dry and wet ingredients with a spoon. Don’t overmix it. Batter should stay slightly lumpy. Cook according to waffle maker manufacturer’s instructions. Sriracha Maple Syrup Ingredients: 2 cups brown sugar 2 cups water 2 Tbsp sriracha sauce 1 tbsp maple flavor Directions: 1. Combine brown sugar and water in a saucepan. 2. Bring to a slow boil, over medium to medium-high heat, stirring until the brown sugar is fully dissolved. 3. Stir in the sriracha sauce and fully combine. 4. Remove from heat and stir in maple flavor. 5. Taste and adjust seasons as needed.
