The use of the fatty acid in building the first class of lipid, the neutral acyl glycerol is presented. The structure of the basic fat molecule is examined and the three basic functions presented. The differences between fats and oils are explored and related to their chemical structures. Saponification or base hydrolysis of fats to form a soap is presented. The chemistry and function of soaps is discussed. The relationship of natural soaps and synthetic detergents is contrasted. 00:00 Lipids 00:11 Neutral Acylglycerols 02:01 Three Functions: a) Fat Depots 03:29 Three Functions: b) Chylomicrons 06:28 Three Functions: c) Protection/Insulation 08:36 Triglyceride Storage Efficiency 11:34 Fats versus Oils 23:57 Triglycerides & Base 26:26 Micelles 29:58 Saponification & Soaps 32:18 Soap & Hard Water Precipitates 33:24 Synthetic Detergents 34:08 Sodium p-Decylbenzenesulfonate 35:08 Sodium Lauryl Sulfate 38:44 Soaps & Surfactants 40:06 Benzylhexadecyldimethylammonium Chloride
