This was a dinner I did not plan ahead for. I cleaned out my refrigerator and used up all of my leftovers from the past week or so. The only new items I used from my pantry were the pasta and the canned tomatoes. It was way better than I expected so I'm sharing it with you guys! Italian Sausage Bow-Tie Pasta 6 oz. bow-tie pasta 4 tbsp. olive oil 3 mild Italian sausage links, casings removed ¼ cup diced red onion 1 green onion 1 tsp minced garlic 14.5 oz can diced tomatoes, drained ½ cup heavy cream 1 cup thinly cut spinach leaves ½ cup grated Romano cheese Salt, to taste Bring a large pot of water to a boil. Add salt & 2 tbsp olive oil to boiling water. Cook pasta according to package directions (~13 minutes); drain. Dice green onion, reserving some for garnish. Meanwhile, in a large deep skillet add 2 tbsp olive oil then cook and crumble the sausage over medium-high heat until cooked through and browned. Add onion and garlic. Cook until onion is tender (~3-5 minutes). Add the tomatoes and heavy cream. Simmer until the mixture thickens, about 10 minutes. Add Romano cheese and spinach and cook an additional 3 minutes. Add the cooked pasta to the sauce. Garnish with reserved green onion or parsley, if desired. / storyofthehills
