Japchae is a simple and delicious Korean noodle dish that uses noodles made from 100% sweet potato starch. It is normally served on special occasions, but I find this noodle dish SO good, I make it whenever I can. Japchae is also known as glass noodles because when you cook the sweet potato noodles, they become shinny and translucent. I am making a vegetarian version of Japchae today, and it will be loaded with colorful veggies. Korean Glass Noodles | Japchae Ingredients: 1 Tablespoon vegetable oil 1/2 medium onion, finely sliced 1 large carrot, finely julienned 1 red bell pepper, finely julienned 1 bag of spinach 12-14 ounces of Korean sweet potato noodles (H-Mart,T&T) Sauce: 1/4 cup soy sauce 2 tablespoons liquid honey or brown sugar 1 tablespoon sesame seed oil 1/2 teaspoon black pepper 1 tablespoon sesame seeds 1.Cook spinach in a large pot of boiling water for 30 seconds or so. Take out of water, and cool under running cold water. Then squeeze excess moisture from the spinach. 2. Saute the vegetables: First saute the onions for about 20 seconds, then add the carrots and saute for another minute or so. Add the bell peppers and saute for another 30 seconds. Turn off the heat and place the cooked veggies on the platter with the cooked spinach. 3. Mix the sauce: Add the soy, honey, sesame oil, sesame seeds and pepper in a small container and set aside. 4. Boil the noodles for 6 minutes, then drain, and run the noodles under cold water for a few seconds. Cut the noodles so they are not so long. 5. Add the sauce to the warm noodles and mix together. Add the vegetables and mix again. Garnish with additional roasted sesame seeds and you are ready to enjoy Japchae!
