Recommended Products Meat Church rubs & seasonings: https://bit.ly/30DXhCB Pellet grills: https://bit.ly/2SAlVQd Cast iron cookware: https://bit.ly/2SApKoo Keep watching more Recipe videos: https://bit.ly/34uhxrw Subscribe to our YouTube channel:    / academy   Chicken Wings 3 Ways RECIPE COURTESY OF MATT PITTMAN Cook Time: 40 min (wings) / 10 min (sauce) Ingredients : 5 lbs of chicken wing pieces Meat Church Holy Gospel Seasoning Buffalo Wings 12 oz buffalo sauce Garlic Parmesan Wings 1 stick butter (8 tbsps) 12 cloves garlic, minced 1/4 cup parmesan cheese 1 tbsp fresh parsley (if desired) Sweet Thai Chili Wings 3 tbsp fish sauce 2 tbsp cooking sherry 1/2 cup rice vinegar 1/2 cup sugar 4 cloves garlic, minced 1/2 tbsp red chili flakes 4 tbsp water 1 1/2 tbsp cornstarch 2 sliced green onion (if desired) 1 tbsp sesame seeds (if desired) Directions: Prepare your pellet grill Heat your pellet grill to a temperature of 375F. You have a lot of options on pellets for a chicken wing cook, so we went with our old faithful – hickory. You can increase the cooking temp to 450F and decrease cook time to 20 minutes for extra crispy wings. Prepare the wings If you bought the whole wing, remove the tip and separate the drummette and wing from each other. Pat them dry. Season the wings generously on all sides with Meat Church Holy Gospel rub. Cook the wings Place the wings directly on the cooking grate of your Pellet Grill for a total cook time of 40 minutes. Flip the wings halfway through the cook. This will allow you time to make your sauces. Your chicken wings should be between 165 – 190F degrees after 40 minutes. While chicken is safe at 165F, it is ok to cook wings even further as it is difficult to dry them out. Once wings reach an internal temp of 160-180F, toss the wings in the sauce of your choice. Place them back in your pellet grill for 5 minutes to allow the sauce to set. This will prevent the sauce from running all over you when trying to eat. Sauces: Buffalo prep Toss the wings in the buffalo sauce. Place them back in your pellet grill for 5 minutes to allow the sauce to set. Remove from heat and enjoy! Garlic Parmesan prep Melt the butter in a medium saucepan. Add the minced garlic and cooked 5 minutes until fragrant. Remove and cool, your sauce is ready. Toss the wings in the prepared sauce. Place them back in your pellet grill for 5 minutes to allow the sauce to set. Take the wings off the grill & finish these off with grated parmesan cheese generously all over the hot wings. Garnish with parsley if desired. Enjoy with ranch or by themselves! Sweet Thai Chili prep Place all ingredients except the cornstarch in a sauce pan and whisk to combine. Bring the mixture to a slight boil and simmer for 10 minutes. Reduce heat and add the cornstarch and water mixture. Stir and until it thickens which will take 2 – 3 minutes. Remove from heat, your sauce is ready. Toss the wings in the prepared sauce. Place them back in your pellet grill for 5 minutes to allow the sauce to set. Take the wings off the grill & finish off with sesame seeds and sliced green onion, if desired.
