CHOCOLATE ALMOND CAKE 🍫🍫 It's my birthday today! Want to know how old I am????? I made this cake for a pre-celebration so I could share it. It's sugar-free and flour-free, and it's incredible. I've been gluten-free for 15 years due to a gluten allergy I developed, and during this time I've dedicated myself to a lot of research and recipe development. Enjoy! Yield: 8 servings 250g toasted almonds with skin 370g chopped semisweet chocolate 80g butter 5 eggs 1 tsp vanilla To decorate: Powdered sugar Red berries Chocolate icing (I'll share it soon) Preheat the oven to 180°C, grease an 18cm baking pan, cover with waxed paper and grease again, sprinkle with cocoa powder 1. Grind the cooled almonds until you get a fine powder 2. In a double boiler, melt the butter and chocolate. Remove from heat, cool slightly, and mix with the ground almonds. Add the eggs one at a time, whisking with a whisk after each addition. Add the vanilla, mix, and pour into the pan. 3. Bake for 20-30 minutes or until a toothpick inserted comes out clean. Remove from the oven and let cool for 15 minutes. Unmold. 4. Serve, sprinkle with powdered sugar, and decorate with berries or chocolate frosting!
