I often get asked how to smoke beef ribs and the most common question is how do I know when they are done and ready to enjoy. Have you ever probed butter? Beef short ribs are one of the toughest cuts of beef, they have loads of collagen in, but when you get the collagen melting, the bbq beef ribs become super tender and are on of the best things you can eat off the bbq. Here I show you how I know when the beef ribs are ready. I cook them with cherry smoke at 140-150c for around 5 or 6 hours, using my Thermapen I can check the temperature is getting close to where I know the beef ribs will start to become tender, this is usually around the 96-97c mark where the collagen in them melts. But they are not fully tender until you can probe them "like butter" but what does this actually feel like, people often starting out don't know what this term means, so using my Thermapen held just above the short ribs, I let the thermometer drop and if it goes straight through the meat, hitting the bone then I know the ribs will be perfect and tender.
