RESTAURANT-STYLE ALOO PARATHA CHEF: AANAL KOTAK INGREDIENTS FOR THE PARATHA DOUGH: • 2 Cups Wheat Flour • 1 Tbsp Ghee • 1 Tbsp Oil • Salt, To Taste • Water, As Needed • Dry Wheat Flour (For Dusting) • Ghee/Oil/Butter (For Cooking On Tava) FOR THE ALOO MIXTURE: • 2-3 Green Chilies • 1-Inch Piece of Ginger • 2 Tbsp Sukha Dhaniya (Coriander Seeds) • 4-5 Boiled Potatoes, Grated • 1 Onion, Finely Chopped • 1 Tbsp Coriander Leaves, Chopped • 1 Tbsp Mint Leaves, Chopped • Salt, To Taste • 1 Tsp Jeera (Cumin) Powder • 1 Tsp Red Chili Powder • 1 Tbsp Amchur (Dry Mango) Powder • 1 Tsp Kasturi Methi (Dried Fenugreek Leaves) • ¼ Tsp Ajwain (Carom) Seeds METHOD PREPARE THE DOUGH: • Combine ingredients: in a large mixing bowl, mix 2 cups of wheat flour, ghee, oil, and salt to taste. knead the dough: gradually add water and knead the mixture into a soft and smooth dough. • The dough should be pliable but not sticky. Rest the dough: cover the dough with a damp cloth and let it rest for 20-30 minutes. PREPARE THE ALOO MIXTURE: • Crush spices: in a mortar and pestle, coarsely crush green chilies, ginger, and sukha dhaniya. • Mix ingredients: in a large bowl, combine the grated boiled potatoes, finely chopped onion, chopped coriander leaves, and mint leaves. • Add spices: add the crushed ginger, green chili, and sukha dhaniya mixture to the bowl. also add salt to taste, jeera powder, red chili powder, amchur powder, kasturi methi, and ajwain seeds. mix thoroughly. • Divide dough and filling: divide the dough into equal-sized balls (about the size of a golf ball). do the same with the aloo mixture. • Roll out: on a lightly floured surface, roll one dough ball into a small circle (about 4-5 inches in diameter). place a portion of the aloo mixture in the center of the rolled dough. • Seal and flatten: gather the edges of the dough over the filling and pinch to seal. gently flatten the stuffed dough ball with your fingers, then roll it out carefully into a larger circle (about 7-8 inches in diameter). Use additional flour for dusting as needed to prevent sticking. COOK THE PARATHAS: • Preheat a tava (griddle) or a non-stick pan over medium heat. • Cook the paratha: place the rolled paratha on the hot tava. Cook for about 1-2 minutes until bubbles start to form. • Flip and cook: flip the paratha, and brush the top with ghee, oil, or butter. cook until golden brown spots appear on both sides, pressing lightly with a spatula to ensure even cooking.
