KEBAB MIX INGREDIENTS Chicken- 300gms. Onion- 2medium. Green chillies- 2 nos. Ginger- 8 gms. Chopped. Garlic- 8 gms chopped. Coriander small bunch. Red chilli powder- ½ tbsp. Cumin & coriander powder- ½ tbsp. ¼ tbsp of turmeric. 1 tbsp of chicken masala. ¼ tbsp of black pepper. Black pepper- ¼ tbsp. Lemon – 1 (half in chicken mic, half in onion pickled bed) Mustard oil- 1 tbsp. --------------------- NEED TO SMOKED CHICKEN MIX Charcoal – 2-3 pieces. Ghee- 1 tbsp . ------------------------- TO MAKE ONION RINGS PICKLED BED WITH KEBAB Onion – 1 round sliced ring. Coriander- small bunch. Red chili powder- ¼ tbsp. Lemon juice- half. Take fresh boneless chicken blend into grinder to make paste. Add onion, ginger, garlic, green chilies paste, coriander, red chili powder, mustard oil, chicken masala, black pepper, black salt, salt, half lemon juice combine and make mix. Burn charcoal pout ghee to create smoke. Close chicken mix into smoke with lid for about 5-10 minutes. Remove lid shift chicken mix into refrigerator (to make mix stiff to roll onto wooden sticks) Now soaked wooden stick into water for few minutes in advanced at least. Take out mix from refrigerator start to put onto wooden sticks. Now heat up iron cast pan till stick smoke. Once start smoke, place chicken skewers on it. Keep change side of kebab, once start to cook star to apply butter with brush (basting process) and keep cook till nice light reddish-brown colour to start. Prepared sliced onion, coriander, red chilli powder, salt and lemon juice mix to eat combination with kebab & serve together with combination of mint sauce or choices of sauces.
