Hyderabadi Kichidi Ingredients: Onion/Pyaz - 1 No. (BS) Oil/Tel - 2 Tbs G&G Paste - 2 Tbs Haldi/Turmeric- 1/2 tsp Green chilies/Hari Mirchi-5 No. Fresh Coriander/Dhania-1/2 (B) Fresh Mint/Pudina-1/4 Bunch Laung/ Cloves - 4 No. Shaza Zeera/Cumin - 1/2 tsp Tez Patta/Bay leave - 1 No. Ghee - 1 Tbs (Full) Dalcheeni/Cinnamon-3 (1 inch) Big Cardamom - 1 No. Green Cardamom - 2 No. Namak/Salt as per taste. Add dry roasted red lentils to the basmati rice, wash and sock it. Procedure: To a vessel add oil, and all the whole garam masala and saute for a minute. To it add sliced onion and fry till it becomes crispy. Now add G&G paste, turmeric and fry till the raw smell leaves away. Add green chilies, water, mint leaves, coriander leaves and salt to it. Allow it to boil. When the water is boiling add socked rice mixture to it. Cook on high flame for first 5 minutes then cook on low flame till it is done. Add ghee and allow it to rest for 10 minutes. Now it is ready to serve. Tomato-Till Chutney Ingredients: Tomatoes-5 No. (MS) Till/Sesame seeds-1 Tbs Salt as per taste Green Chilis - 5-6 No. Oil/Tel- 2 Tbs Procedure: Dry roast till (sesame seeds) till you get golden brown color and take into a separate bowl. To the same pan add oil and fry green chilies for a minute and take it separately. To the same pan add chopped tomatoes, salt and cook till they are soft. Now grind all the ingredients one by one and make it into a chutney. Now it is ready to serve.   Hyderabadi Style Till ka Kacha Khatta Ingredients: Onion/Pyaz-1 No. (MS) Till/Sesame Seeds-1 Tbs Imli/Tamarind- Small Lemon Size Hari Mirch/Green Chilies- 2 No. Pudina/Mint Leaves - 1/4 Bunch Fresh Dhania/Coriander-1/4 (B) Lessan/Garlic Cloves - 8 No. Whole Red Chilies - 2 No. Curry Leaves - Few Mustard Seeds/Rai - 1/4 tsp Zeera/Cumin Seeds - 1/4 tsp Namak/Salt as per taste Red chili powder - 1/2 tsp Haldi/Turmeric - 1/4 tsp Oil/Tel – 2 Tbs Grind the dry roasted Til (Sesame seeds). Prepare the tamarind pulp. To a bowl add onion, chopped green chilies, red chili powder, mint, fresh coriander, sesame powder, salt, tamarind pulp and mash gently add water and adjust the taste and consistency. For tadka add oil, Mustard seeds, Garlic Cloves, Whole Red Chilies, Cumin Seeds, Curry Leaves, fry for 30 sec and switch off the flame. Then add turmeric (optional) and add tadka to the mixture.
