Preheat the oven to 375 degrees. 2.) In a large skillet, brown the ground beef and drain. Add the chili beans, diced tomatoes, and seasoning. Bring to a low boil and reduce heat to simmer. Simmer uncovered for 5-10 minutes. Divide the chili mixture among four (12oz) ramekins. Set aside. 3.) In a mixing bowl, combine the Jiffy corn muffin mix, 1 egg, and 1/3 cup milk. Stir until well combined. 4.) Sprinkle half the cheese over each ramekin chili. 5.) Spoon the corn muffin mixture into each ramekin. Spread evenly to the edge. 6.) Move each ramekin onto a baking sheet and bake uncovered for 20-25 minutes or until golden brown. **Serve chili pot pies with a sprinkle of cheese and sour cream if desired. Delicious!! RECIPE #2 TAMALE POT PIES **Use 4 (12oz) ramekins Ingredients: 1 lb ground beef 1/2 cup white onions, diced 1/2 cup green bell pepper, diced 1/2 tsp garlic powder 2 tablespoons taco seasoning 1/4 cup water 3/4 cup enchilada sauce (red) 1 cup Colby cheese, shredded Cornbread Topping: 1 box Jiffy corn muffin mix 1/3 cup sour cream 1/2 cup cream-style corn 1/4 cup milk 1 egg 1/2 cup Colby cheese, shredded Directions: 1.) Preheat the oven to 350 degrees 2.) Combine the ground beef, onion, and green bell pepper in a large skillet. Sprinkle in the garlic powder. Cook until no longer pink and the onion and bell pepper are tender. Drain. 3.) Add the taco seasoning and water to the skillet. Stir well and cook for 3 minutes. Stir in the enchilada sauce. Heat until bubbly. 4.) Transfer the beef mixture to the ramekins, dividing evenly. 5.) Sprinkle each ramekin with cheese. Set aside. 6.) Combine all of the topping ingredients in a mixing bowl. Stir by hand until well mixed. Pour the mixture equally into each ramekin. 7.) Bake uncovered for 30-35 minutes or until golden brown. ENJOY!!! We like to serve these with extra sour cream! Delicious! RECIPE #3 EASY CORN CASSEROLE Mix the following together in a large bowl: 1 can (15 oz) whole corn, drained 1 can (15 oz) cream-style corn 8oz of sour cream 1 stick (1/4 lb) melted butter 1 box of Jiffy corn muffin mix 1.5 cups shredded Colby cheese Spoon into a greased 2.5-quart casserole dish. Bake uncovered for 40 minutes at 375 degrees. Allow to set for 10 minutes before serving. Enjoy!! RECIPE #4 JIFFY CORNBREAD TACO BAKE Use a 2-quart casserole dish Ingredients: 1 lb ground beef 1 cup frozen corn 1 (8 oz) tomato sauce ½ cup water ½ of a green bell pepper, chopped 1 envelope taco seasoning 1 box (8.5 oz) Jiffy corn muffin mix 1 can (2.8 oz) French fried onions, divided 1 cup Colby cheese, divided Directions: 1.) Preheat the oven to 400 degrees. 2.) In a skillet, brown the ground beef and drain. Stir in the corn, water, tomato sauce, bell pepper, and taco seasoning. Bring to a boil. Reduce heat and simmer for 3-5 minutes. Remove from heat and set aside. 3.) Prepare the corn muffin mix per the directions on the package. Fold in half of the French-fried onions. 4.) Assemble: Transfer the beef mixture to the casserole dish. Sprinkle half of the cheese on top. Spoon the cornbread mixture on top and spread evenly. 5.) Bake uncovered for 20 minutes. Remove and sprinkle with remaining cheese and French-fried onions. Return to the oven for an additional 3-5 minutes or until the cheese melts. Serve with sour cream if desired. Yummy!
