Today I am making a Classic Dessert my Momma and Grandmother use to make for me all the time when I was growing up, Rice Pudding!! Creamy, Decedent, and full of flavor cooked on the Stove Top; if youâre a fan of Rice Pudding, this will be your go to Recipe!! Ellenâs Dessert Recipes:    âĒ Desserts  Ellenâs Maple Pecan Rice Pudding Recipe:    âĒ Episode 308: Maple Pecan Rice Pudding ð  3/4 cup long grain white rice, rinsed 1 1/2 cups water 2 cups evaporated milk, divided 1/3 cup white sugar 1/4 tsp salt 1 extra large or jumbo egg, lightly beaten 2/3 cup raisins or dried cranberries + 3 tbsp hot water 1 tbsp unsalted butter 1 tsp pure vanilla extract Ground cinnamon, for sprinkling In a small or medium bowl, add raisins and 3 tablespoons hot water; stir and let the raisins soak for 5 minutes. Drain the water and set aside. In a medium or large pot over high heat, add rice and water; stir and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes. After 20 minutes, turn the heat up to medium and add in 1 1/2 cups evaporated milk, sugar, and salt; stir and cook uncover for 15-20 minutes until thick and creamy. Then add in 1/2 cup evaporated milk and egg, stir and continue cooking for 2 minutes. Remove from the heat and add in raisins, butter, and vanilla. Serve with a sprinkling of cinnamon on top and enjoy. Serve warm, room temperature or cold. Cookâs Note: Pour rice pudding into a bowl and cover with plastic wrap to keep it creamy.
