Today I am participating in a Mardi Gras Collaboration with my good friend, Soul Food Cooking; we are making classic Louisiana Dishes! They will be making Shrimp and Sausage Gumbo and for our Collab, I will be making classic Dirty Rice but with a twist, Vegetarian Style Dirty Rice! Ellen’s Cajun and Creole recipes playlist: • Creole and Cajun Recipes 2 cups uncooked long grain white rice, rinsed 4 cups vegetable broth Pinch kosher salt 2 tablespoons canola oil 1 medium or large yellow or white onion, diced 1 green onion, finely chopped (white and green parts), plus more for garnish 1 celery stalk, diced 1 red bell pepper, diced 1 fresh jalapeño pepper, diced and seeds removed 1 heaping tablespoon minced garlic (about 1 large clove) 1 tablespoon creole or cajun seasoning 2 bay leaves 1 tablespoon chopped fresh thyme 1/4 cup Worcestershire sauce 1 to 2 tablespoons soy sauce 1 teaspoon kosher salt 2 teaspoons white or black pepper 1 (14-ounce) can vegetable broth 2 cups fresh spinach leaves, rinced In a medium saucepan over high heat, add in the 4 cups of vegetable broth, pinch salt, and rice and bring to a boil. Then turn the heat down to low and let the rice simmer for 20 minutes or until all the liquid absorbs. Set aside. In a large pot over medium-high heat, add and heat the canola oil. Add in the onion, green onion, celery, bell pepper, jalapeno and garlic and cook, stirring frequently, until the vegetables are soft about 10 minutes. Add and stir in the creole (or cajun) seasoning then add and stir in the bay leaves, thyme, salt and pepper. Add in the cooked rice, Worcestershire sauce, soy sauce and a little vegetable broth (to make a sauce, you add less or the whole can) and heat through, stirring, until the rice is coated with the sauce. Add in the spinach then reduce the heat to medium-low; cover and cook until the spinach has cooked down and the flavors are combined, about 15 minutes. Garnish with green onions. Serve and enjoy!
