Maqluba ( upside down) | rice with vegetables and chicken | Arabic food

Maqluba or Maqlooba (Arabic: مقلوبة) is a traditional Iraqi, Lebanese,Palestinian, and Jordanian dish served throughout the Levant. It consists of meat, rice, and fried vegetables placed in a pot which is flipped upside down when served, hence the name maqluba. #ARABIC #food #Maqluba Ingredients: 1 Chicken To boil the chicken you need: 1 onion Rosemary Cardamom Let the chicken boil until it’s cooked pretty well 3 sliced potatoes A head of cauliflower 2 sliced tomatoes Deep fry the cauliflower and the potatoes 1 ½ cups of short grain rice 1 ½ cups of long grain rice ( Basmati) I rinse the rice three times and soak it water for 20 minutes Then I add some spices to it 2 tsp of black pepper 5 tsp of salt ½ tsp of cardamom ½ tsp of turmeric 1 tsp of all purpose seasoning Fried short noodles ( I fry them with a little bit of vegetable oil ) In a pot I heat vegetable oil ( you can add ghee as well) then I add the chicken first Then I distribute the vegetables all over the pot, then I add the rice, finally I add the chicken stock cover it well and let it cook. Garnish with roasted almond and fresh parsley.
