Smokey Short Rib Sandwich, Beefy Chips, Corn & Slaw Serves 4 ingredients: 4 x Beef Short Ribs 1 x Pint Beef Stock 1 x Cinnamon stick 3 x Star Anais Salt & Pepper Frylight Low Calorie Spray Beefy Chips 4 x large potatoes skin on, cut in to thick chips. Olive oil to slightly cover a baking tray/dish 2 x Tbsp liquid Beef stock concentrate 2 x Tsp Smoked Paprika Salt & Pepper Coleslaw 1/2 Small Red Cabbage 1 x Lge White Onion 1 x Lge Carrot 3 x Tbsp Wine or Cider Vinegar Salt & Pepper 4 x Tbsp Natural Yoghurt BBQ Sauce 10 x Tbsp Ketchup 2 x Tbsp Worchester Sauce 2 x Tbsp Wine or Cider Vinegar 2 x Tsp Smoked Paprika 2 x Tbsp Honey 2 x Tbsp Bourbon (optional) 4 x Frozen Corn Portions 4 x Lge Burger Buns Cooking Method: Short Ribs Trim off excess fat & season well with salt & pepper. Spray Frylight oil into a frying pan & saute the ribs on all sides until seared, remove from frying pan & set aside. Add one stock pot to a jug & fill with a pint of boiling water. In an oven proof dish place the beef stock adding star anise & cinnamon stick, place sauted ribs into the dish, bone facing upwards, ensuring the stock covers the meat completely. Set oven to 170c, cover your oven proof dish & place in the oven for 2.5 hours to 3.5 hours, until fall off the bone tender. When finished take the ribs out & set aside, allowing to cool. Beefy Chips In a baking tray add enough oil to lightly cover the bottom, adding the beef stock concentrate. Add your thick cut chips & mix thoroughly until the chips are fully coated, season well with salt & sprinkle over smoked paprika. In a preheated 190c oven , place the baking tray into the centre of the oven for 45 minutes, turning & basting once, until chips are crispy & the colour as shown in the video. 20 minutes into the cooking time add the four corn portions directly onto the rack in the oven & cook for the remaining cooking time then remove. Coleslaw Using a speed peeler/grater, grate the cabbage, onion, carrot as per the video. Place into a dish & mix well, adding salt & pepper. Then add your wine/cider vinegar & again mix well, adding your yogurt & mix thoroughly, taste & adjust the seasoning if required, then set aside. Ribs Remove all bones from the ribs & with two forks, pull the rib meat to fine strands. BBQ Sauce In a small non stick frying pan/sauce pan add your ketchup, worcester sauce, vinegar, smoked paprika, honey, bourbon & on a medium flame stir well until it starts to thicken. Turn off. In another frying pan, spray with frylight & add the pulled rib meat & fry on a medium heat for 4 minutes stirring constantly, then add the bbq sauce until the meat is covered but not swimming in the sauce, mix thoroughly for 2 minutes, lower the heat to the lowest setting & simmer for 4 minutes. Burger Buns Cut burger buns in half & toast both sides, then add your beef mixture to each burger bun, topping with your coleslaw, then put the burger bun lid onto the top of your bun. Serve with your beefy chips, additional coleslaw & corn & above all, Enjoy.🍔🍔🇬🇧🇬🇧
