Hello Friends, Hope you guys are doing well. Today I am sharing recipe of Leswa / Lasora / Rajasthani Gunde . It comes in summers for very short period. Its very delicious in taste and have various health benefits also. So generallyeither people preserve them in form of Aachar or makes sabji of the same. Aachar takes time to fermante and people like me who loves to enjoy them instantly and frequently...and cant wait till Aachar gets fermanted..it's apt version of Aachar . Its instant and quick to make plus you can consume it straight away.. n its taste gets enhance day by day. You can make once and store it for 4 months in fridge and enjoys it with paratha , Dal rice or puri. Hope you guys this Instant version of Leswa Aachar and share your feedback in comments section. Ingredients- 1. 1 kg leswa 2. 500 gms raw mango 3. Green chillies 15- 20 4. 1.5 inch ginger piece 5. 250 gms Mustard oil 6. Salt to taste 7. Turmeric pwdr 8. Red chilli powder to taste 9. Kashmiri Red mirch powder 10. Hing 11. 3 tbsp Sauf powder 12. ½tbsp dhaniya powder 13. 8- 10 sabut Dry Red chilies 14. ½tsp meethi dana 15. ½tsp cumin seeds. Procedure to make Delicious Aachar/ Chutney - 1. Wash all leswa and allow them to pat dry on a clean towel. 2. Remove stems as shown in video. 3. Leswa are very soft in texture, u can boil them in open container for appropriately 6-8 mins or pressure cook them on high flame for 1 whistle and opens cooker immediately. 4. Drain out excess water and allow them to cool down in a plate. 5. Grate ginger and raw mango and slit green chillies into halves. 6. Once leswa are cool down, then de seed them by applying little oil on your palms. 7. In the mean while heat the Mustard oil for approx 100 gms in some heavy bottom pan. 8. Add meethi seeds n cumin seeds , allow them to splatter n add grated ginger. 9. Now boiled leswa allow them to roast for 4 - 5 mins. 10. Now add salt, turmeric powder, hing, green coriander powder, sauf powder,red chilli powder, allow it to roast for another 4-5 minutes. 11. Add grated raw mango n mix well for 3 mins. 12. Finally add green chillies and cook for 5 minutes. 13. Once it seems to be done, take it out in a open vessel as shown and allow it cool down completely. 14 . Take a grinder jar and grind it into a paste. 15. Heat the remaining Mustard oil in a pan , allow it to cool down a bit, add dry red chillies and Kashmiri Lal Mirch and transfer it to grinder paste and cover it with a plate. Allow it to cooked for 4- 5 mins as shown. Note - just taste it before putting Tadka, add salt ,amchur powder or red chili powder if required. 16. Allow it to cool down and transfer it to a dry n air tight box and store it in fridge for 4 months approx. It's ready to Relish it Now and store in Fridge as well. Enjoy !!!!!! Precaution for storing Aachar - Don't use wet or dirty spoon to take out Aachar . Air tight jar should be clean and dry. Please do like share n subscribe.
