We're here to serve and support YOU. :) KEY TOPICS: overnight oats, easy breakfast, healthy breakfast, healthy start, pumpkin, serotonin, mood, mental health RECIPE: Maple Pumpkin Pecan Overnight Oats INGREDIENTS: 1 cup oatmeal 1/2 cup canned pumpkin 1 Tbsp maple syrup 1 cup almond milk 1/4 cup full-fat grass-fed plain or vanilla greek yogurt 1 cup coconut milk/cream 1 Tbsp each hemp, chia, flax 1 Tbsp pumpkin pie spice 2 Tbsp goji berries 2 Tbsp pecans 2 Tbsp coconut flakes (if desired) PREPARATION INSTRUCTIONS: In a large mixing bowl, combine pumpkin, yogurt, almond milk, maple syrup, and coconut cream. Mix until smooth. Mix in oatmeal, hemp, chia, flax, pumpkin pie spice, and 1/2 of the goji berries, pecans (and coconut flakes if using). Divide the mixture between two mason jars. Add the tops to the mason jars and refrigerate overnight. Remove the mason jars from the fridge when ready to eat. Top with remaining goji berries, pecans (and coconut flakes if using), serve, and enjoy!
