Just because Toddy is Brewed Cold, doesn't mean it has to stay cold. By adding steamed milk to Toddy brewed concentrate or blending it with hot water, you can craft deliciously smooth, rich, lower acid coffees and teas that will delight and surprise your customers. Now why would you want to do this especially in a cafe setting where you have some great methods already to serve hot coffee to your customers? Well today we're going to talk about some creative ways to offer some new flavour experiences to your customers by using Toddy-brewed coffee. The first method is a very simple way to to serve your customers a cup at a time. It is a great alternative for maybe decaf coffees or for those customers who are looking for something a little bit lower in acidity, but want a hot cup of coffee. Another option that I'm going to show you is actually steaming the concentrate to produce an almost frothy and hot coffee that is going to be unparalleled in flavour when you compare it to espresso or other hot brewed methods. This is a great option for really featuring a single origin or other coffees that you might be especially proud of and for example you can pair it in a flight with other brewing methods of the same bean to really showcase to your customers how the brewing method can impact the flavour profile of a coffee. First way is simple and easy: we are going to take our fresh Toddy-brewed concentrate, a shot glass for measuring and a cup, because we're serving in a cup, and a sign. I'm going to do one part concentrate to three part standing hot water and that's going to approximate the strength of drip. And it truly is a simple as that. I like it, it doesn't taste bland, doesn't taste what you'd expect from, you know, quote-unquote "low acid", it's just really easy to drink and I'm just going to keep drinking it - I haven't had enough coffee today. Next we're going to simply steam Toddy brewed concentrates with a steam wand of an espresso machine. Now for this, I'm going to take full strength concentrate. Depending on the drink you'd like to serve, you can dilute it in advance. Take it over to my espresso machine here, and turn on and the goal is really just to get it hot. As you can see, the steaming process creates a nice crema-like body in the coffee and this cup has a fair amount of brightness, but it's actually still really smooth and sweet. Today I showed you two different ways of serving cold brew coffee hot in a cafe setting. There are lots of other ways and I hope that you would experiment, take some ideas from this video series and try them in your own cafe.
