Let it marinate for 1 hour. Prepare the Rice: Boil water in a pot with salt, zeera, black peppercorns, cloves, cinnamon sticks, and badan ka phool. Add soaked rice and parboil until 70% cooked. Drain and set aside. Cook the Chicken: Heat oil in a large pan. Add the marinated chicken and cook on medium heat until the oil separates, and the chicken is cooked through (around 15–20 minutes). Layering the Biryani: In the same pot, layer the cooked chicken at the bottom. Add parboiled rice over the chicken in an even layer. Sprinkle food color and keora water on top of the rice. Cover the pot with a tight-fitting lid or seal with dough to trap steam. Cook on low flame for 15–20 minutes (dum method) to let the flavors infuse. Serve: Gently mix the biryani before serving to combine flavors. Serve hot with the raita prepared below. Raita Recipe Ingredients: Yogurt: 1 cup Water: ¼ cup (to adjust consistency) Salt: To taste Cucumber: 1 (grated) Onion: 1 (finely chopped) Tomato: 1 (finely chopped) Green Chili: 1 (finely chopped) Coriander (Hara Dhaniya): 2 tablespoons (finely chopped) Roasted Cumin Powder: ½ teaspoon Chat Masala: ½ teaspoon Method: In a bowl, whisk yogurt with water until smooth. Add salt, roasted cumin powder, and chat masala. Mix in cucumber, onion, tomato, and green chili. Garnish with fresh coriander leaves. Chill the raita before serving.
