Full method below. 👇 🍜 *SPICY CHICKEN NOODLE SOUP (JERK & SCOTCH BONNET)* *INGREDIENTS:* • 4 Boneless, Skinless Chicken Breasts • 3 litres (12 cups) Chicken Stock • 3 tbsp Butter • 1 large Onion, diced • 2-3 stalks Celery, diced • 1 large Carrot, diced • 6 cloves Garlic, chopped • 2 tbsp Dry Jerk Seasoning (or Cajun), divided • 2 sprigs fresh Thyme • 2 Bay Leaves • 1 whole Scotch Bonnet Pepper (pierced, not chopped – for aroma!) • Salt & Black Pepper to taste • 250g (8 oz) Egg Noodles or Pasta of choice • 2 tbsp fresh Parsley, chopped • 2 tbsp grated Parmesan Cheese (optional, for serving) *METHOD:* 1. *SEAR CHICKEN:* Pat chicken dry, season with 1 tbsp jerk seasoning, salt, and pepper. In a large skillet, heat 1 tbsp butter over medium-high. Sear chicken 2-3 mins per side until golden. Transfer to a large pot, cover with chicken stock. 2. *POACH CHICKEN:* Bring stock to a boil, then immediately turn off heat. Cover and let chicken poach in the residual heat for *15-20 mins* until cooked through. Remove chicken, let cool slightly, then shred. Reserve the stock. 3. *SOFFRITTO:* In a large Dutch oven, melt remaining butter over medium heat. Add onion, celery, carrot. Sweat for 5-7 mins until soft. Add garlic and remaining jerk seasoning, cook 1 min. 4. *BUILD SOUP:* Add thyme, bay leaves, whole Scotch bonnet (don't burst it!), and the reserved chicken stock. Bring to a simmer, cook for *15-20 mins* to let flavours meld. 5. *NOODLES:* In a separate pot, cook noodles in salted water until al dente. Drain. 6. *COMBINE:* Remove Scotch bonnet, thyme stems, and bay leaves from the soup. Stir in shredded chicken and cooked noodles. Heat through. Adjust seasoning. 7. *SERVE:* Ladle into bowls.
