It cooks so quickly that I can afford to cook it after all my mains are ready. It takes about three minutes. Whatever you don’t finish, put them in the fridge with cling film and they taste just as good as a cold salad the next day. At the very end, we dressed it with a tiny dash of toasted sesame oil. There is a huge difference between toasted sesame oil and plain sesame oil. While plain sesame oil has a high smoke point (210°C / 410°F) and is suitable to use as a cooking oil, toasted sesame oil has a much lower smoke point, thicker consistency and very concentrated flavour. It should always be treated as a salad oil, and you should just use a tiny bit, so that it doesn’t overpower the dish with sesame flavour. Ingredients Bean Sprouts Vegetable oil Salt - to taste Black pepper - to taste Soy sauce - to taste Toasted sesame oil - the smallest dash Chives - sliced for garnish Directions 1. Heat pan on high heat (induction 8). 2. When the pan is hot, add vegetable oil. 3. When the oil starts to shimmer, add bean sprouts. Season with salt and pepper to taste and keep stirring to cook evenly. 4. Once they start to become slightly translucent (about 2-3 minutes), lower the heat to medium-high (induction 6) and add a dash of soy sauce and mix vigorously to avoid the soy sauce burning. 5.
