Ingredients • Carrots – 400 grams • Ghee – 1 tbsp • Sweetened condensed milk – 3/4 cup (adjust to taste) • Whole milk – 2 cups or as per the requirement Milk powder 1/4th cup ( optional) • Cardamom powder – ½ tsp • Chopped nuts (cashews, almonds, pistachios) – 2–3 tbsp • Raisins – 1 tbsp (optional) Method 1. Prep carrots – Wash, peel, and grate the carrots (use a thicker grater if possible). 2. Roast nuts – Heat 1/2 tbsp ghee in a heavy pan, fry nuts and raisins, then remove and keep aside. 3. Cook carrots – In the same pan, add remaining ghee, then the grated carrots. Sauté on medium heat for 6–7 minutes until they soften and lose raw smell. 4. Add milk– add milk gradually in batches and cover and cook over low until it’s mostly absorbed. Keep stirring in between. 5. Add condensed milk and milk powder – Stir in the condensed milk. Cook on medium-low, stirring often, until the mixture thickens and starts leaving the sides of the pan (about 10–12 minutes) Keep stirring in between. 6. Flavoring – Add cardamom powder, fried nuts, and raisins. Mix well. 7. Finish – Cook another 2–3 minutes until glossy and aromatic.
