Chocolate Hazelnut Slice Recipe Base 250g hazelnut meal 8 egg whites 250g caster sugar Topping 200g dark chocolate, melted 8 egg yolks 160g caster sugar 200g butter 1. Preheat the oven to 160 . Line a 33x22cm tin. 2. To make the base whisk the egg whites until soft peaks form. Continuing to whisk, slowly add the sugar until soft peaks form.With a spatula gently fold in the hazelnut meal. 3. Pour the mixture into the prepared Tin and bake for 40 minutes or until firm to the touch and golden on top. cool completely. 4. To make the topping melt the chocolate. Set aside to cool slightly. 5. Beat together the egg yolks and sugar until thick and pale. Add the butter, a little at a time, until well combined. Add the melted chocolate and beat again. 6. Pour the topping mixture on top of the base and spread evenly. Bake for 20 minutes or until set. (The top will still wobble a little but will continue to set as it cools.) Place on a wire rack to cool then into the fridge to chill completely. 7. To avoid cracking when serving, use a sharp knife dipped in hot water and slice the cake while still cold then set aside until room temperature before serving. The cake can also be placed in the freezer and sliced while still frozen then defrost to serve.
