High Protein Banana Bread 2.5 cups of almond flour 1 tsp baking soda 1 tsp cinnamon 2 tsp vanilla Pinch of salt 3 eggs 1/2 cup cottage cheese 3-4 tbsp of raw honey 3-4 ripe bananas 1/2 cup chocolate chips (I used lily’s, they are sweetened with stevia) 1. Preheat oven to 350° 2. Combine wet ingredients. Peel and smash the bananas in a bowl, then add eggs, cottage cheese, honey, and vanilla. Mix well. 3. Add the dry ingredients: almond flour, baking soda, cinnamon, salt, and mix well. Finish by adding the chocolate chips. 4. Grease a banana bread pan with butter, or line with parchment paper. This step is really important and this banana bread mix tends to stick. 5. Bake for 50 minutes and then let cool for at least an hour. Enjoy with butter, yogurt, creme fraiche, fruit, etc!
