"Smoky Keema Recipe | Restaurant-Style Keema with Authentic Smoky Flavor | Easy & Delicious" ‪@Afkitchencorner‬ Ingredients Buffalo Keema (minced meat) – 500g Whole spices: 1tsp jeera 1tsp Kali mirch 6 laung 1/4 tukda jaifal 2 badi elachi 11/2 tsp dhaniya 50g nariyal 4 sukhi lal mirch 1 phul javitri 4 hari elaichi 1 inch dalchini Ginger-garlic paste – 1 tbsp Red chili powder – 1 tsp (adjust to taste) Turmeric powder – 1/2 tsp Yogurt 100g Kashmiri lal mirch powder 1 tsp Salt – to taste Oil – 3-4 tbsp Water – 1 cup Charcoal – 1 small piece Ghee – 1 tsp (for smoking) Fresh coriander leaves – for garnish Direction 1. Roast and Prepare the Spice Mix: Heat a dry pan over low-medium heat and roast cumin seeds, coriander seeds, black peppercorns, cloves, green cardamom, cinnamon stick, and bay leaf until aromatic. Allow the spices to cool slightly, then grind them into a fine powder using a spice grinder or mortar and pestle. 2. Marinate the Keema: In a bowl, combine the mutton keema with the freshly ground spice powder, ginger-garlic paste, red chili powder, turmeric powder, yogurt , kashmiri lal mirch powder and salt. Mix well to coat the keema thoroughly with the spices. Cover and let it marinate for at least 2 hours. 3. Cook the Keema: Heat oil in a large pan over medium heat. Add the marinated keema and sauté for a few minutes until it starts to release its own juices. Continue cooking, stirring occasionally, until the oil begins to separate from the keema mixture. 4. Add Water and Simmer: Pour 1 cup of water into the pan, stir well, and let the keema cook on medium heat until it’s tender and the water has mostly evaporated, leaving a rich gravy. 5. Infuse the Smoky Flavor: Place a small piece of aluminum foil in the center of the cooked keema. Heat the charcoal on an open flame until it’s red hot, then carefully place it on the foil. Drizzle 1 tsp of ghee over the hot charcoal, which will immediately produce smoke. Quickly cover the pan with a lid to trap the smoke and let it sit for 5-7 minutes. 6. Garnish and Serve: Remove the foil and charcoal carefully. Stir the keema to combine the smoky flavor.
