Ilish Polao or Hilsa Pulao is an extremely fragrant and delicious Bengali style fish pilaf cooked with Ilish or Hilsa. This flavorsome Bangladeshi delicacy is one of the traditional dishes of Bengal. Ingredients: For Fish Marinate, • Hilsha Fish - 7 pcs • Sour yogurt - 1 Cup • Chilli powder - 1 tsp • Cumin powder - 1 tsp • Salt - To taste • Oil - 1/3 Cup • Chopped onion - 1 piece(big) For Fish & Polao, • Green chilli - 8-10 pcs • Sugar - 1 tsp • Biryani Masala - 1 tsp • Cinnamon - 3 shred • Cardamom - 4 pcs • Bay leaf - 2 pcs • Chopped onion - 1 piece(big) • Basmati Rice - 0.5 KG • Salt - To taste • Water - 4 Cup • Green chilli - 8-10 pcs Method Take a bowl to add sour yogurt, chili powder, cumin powder, and salt mix well to make a paste Marinate hilsha fish with the paste and keep aside for few mins Fry chopped onions with cooking oil until light brown In the same oil put the excess marinate paste and cook for a few mins with close the lid Saute and add sugar then biriyani masala Mix well and add hilsa fish Add green chilies and cook for 5 minutes on low heat with the lid on Garnish with fried onions and close the lid to keep aside Take a big pan of water and add salt, cinnamon, cardamom, bay leaves, oil to boil for 2-3 mins Pull off all ingredients and add washed basmati rice Cook the rice 70% and remove Take a pan and garnish with ghee Add the fish between two the rice layers Garnish with fried onions and (Dum) cook for 15 minutes on low heat with the lid on Ready to Enjoy!
