When I did the shopping for this series, originally I had only intended for this food to last me the week, but as it turns out, it was possible to get further than that, so we are now on day 8 of Budget Grocery Week and trying to stretch the meals as far as possible. Today's Menu: Mashed Peas on toast with a fried egg and salt and pepper (no coffee today, sad face) A turkey sandwich with mac and cheese Fried Tuna and rice fritters/croquettes I mixed my leftover broccoli cheese rice with a packet of ranch tuna and an egg and fried these in little patties. I also made a sauce on the fly by mixing sour cream with a hint of spicy mustard, some cheese powder, and some water. All in all it was a very creative and nice meal!
