Cherry tomatoes chopped - 2/3 cup 3. Minced red onion - 1Tbsp 4. Salt - 1/4 Tsp 5. pepper - 1/4Tsp 6. Minced Garlic - 1/2 Tbsp 7. Fresh Mozzarella pearls - 1/2 to 2/3 Cup 8. olive oil - 2Tbsp 9. Sliced and toasted French bread Baguette 10. Drizzle with Balsamic glaze(optional) Notes:- Do not replace fresh basil with dries basil. You can substitute red onion with any onion but not shallots. Do not substitute olive oil with any other oil. Use any FRESH mozzarella (ball or pearl or sliced) sliced in to bite size pieces. Use Fresh mozzarella only. slice the french bread baguette at angle of 45° and not at 90°. Toast the bread with olive oil on both sides.this makes the Bruschetta crunch. For a softer Bruschetta skip toasting the bread. Serve immediately. The longer it stands the more watery it gets as the tomatoes and onion react with salt.
