LARGE FAMILY CHEAP DINNER IN THE INSTANT POT | COOK WITH ME ON A BUDGET
My name is Christine, and welcome to Frugal Fit Mom! Today we have a really cheap chicken tortilla soup version to be made in the Instant pot! Recipe Season 2-3 chicken breasts with taco seasoning, sear in a soup pot or instant pot. Pour in 2-3 chopped onions and 2-3 minced cloves of garlic. Stir until onions are soft. Add 6 cups chicken broth, 1/2 tsp cumin, 1/2 tsp chili powder, juice of 1 lime, and a dash of cayenne. Add 2-3 cans of pinto beans and add the seared, chopped chicken back in. Simmer on the stove for 20 minutes until the flavors come together or cook at high pressure for 20 minutes in the instant pot. Taste for salt. Top with cilantro, avocado, pepper jack cheese, and chips.
