Mini Pumpkin Spice Pies Makes 24 mini pies Recipe: 15 oz can pumpkin puree 1 tsp cinnamon 1 tsp pumpkin spice mix 1 tsp salt 1 tsp vanilla extract 3 eggs ½ cup granulated sugar ¼ cup brown sugar 24 graham cracker crusts Whipped cream and sprinkle of cinnamon Directions and timestamps: (0:18) Warm the pumpkin puree in a small pan over medium low heat (0:27) Add the spices and the vanilla extract; mix well (0:48) Add the heavy cream, mix well to combine and warm though; remove from heat (1:07) Into a small bowl, whisk 3 eggs, add the sugars and mix well to combine (1:23) Before adding the sugar mixture to the pumpkin mixture, temper the egg/sugar by pouring some of the pumpkin first (so that you do not cook the eggs) combine the sugars and the pumpkin mixture well (1:49) Pour ½ cup of the mixture into the graham cracker pies, 24 total (2:01) Bake 350F/175C for 25 minutes and cool to set Serve with a dollop of whipped cream and the sprinkle of cinnamon Instagram:   / gingerpopki.  .
