Ingredients For the Chicken & Shrimp Marinade: 450g chicken breast or thigh, cut into small pieces 8 medium shrimp, peeled and chopped ¾ tsp salt ½ tsp black pepper ½ tsp garlic paste ½ tsp ginger paste 1 tsp soy sauce 1 egg white ½ tsp garam masala ½ tsp cumin powder ½ tsp red chili powder 1 tbsp all-purpose flour 1½ tbsp corn flour For the Stir-Fry: Neutral cooking oil (for frying and sautéing) 2 eggs, lightly beaten 1½ tsp finely chopped garlic 1 tsp ginger paste ¾ cup chopped green beans 1 green bell pepper, chopped 1 carrot, chopped 2 green chilies, finely chopped 1 tomato, chopped 1 tsp soy sauce 1 tbsp vinegar 1½ tsp tomato ketchup 2 cups cooked, cooled rice (preferably day-old) ¼ tsp cumin powder ¼ tsp white pepper ¼ tsp garam masala 1½ tsp sugar 2 tbsp chopped fresh coriander (for garnish) 🔥 Instructions 1. Marinate the Proteins: In a bowl, mix chicken, shrimp, salt, black pepper, garlic paste, ginger paste, soy sauce, egg white, garam masala, cumin powder, and red chili powder. Add the flour and corn flour, mix well, and set aside while you prep the veggies. 2. Cook the Chicken & Shrimp: Heat oil in a pan over medium-high. Fry the marinated chicken and shrimp for 4–5 minutes until golden and just cooked through. Remove and set aside. 3. Scramble the Eggs: In the same pan, add a little oil and lightly scramble the eggs. Remove and keep aside. 4. Stir-Fry the Veggies: Add more oil if needed. Sauté garlic and ginger until fragrant (about a minute). Toss in green beans, bell pepper, and carrot. Add a pinch of salt and cook for 2–3 minutes until slightly softened. Stir in the green chilies and tomato. 5. Build the Flavor Base: Pour in soy sauce, vinegar, and ketchup. Stir well.
