Egg Bhurji Recipe | Anda Bhurji | Egg Porutu is one of the spicy and flavoured versions of scrambled eggs from North India. Many people are addicted to street-side food because of the style they use to make recipes or the spices they use to enhance the taste. Our version of the recipe resembles street-side food as we have used a blend of spices except for pav bhaji masala. I have substituted pav bhaji with garam masala. Many of us love to make this recipe at home not because it’s tasty but it’s easy to make with readily available ingredients. To attract customers even branded spice makers are selling their products in small sachets of Rs.5. So we can purchase them and add to our recipe to enhance flavour. When it comes to street-side food, they tend to add MSG or tasting salt, it’s up to you. I have avoided tasting salt as it’s not good for health. Based on the requirement we can adjust the juiciness of this recipe. If you are eating with bread recipes like chapatti, paratha or naan we need to cook till eggs are fried. If we eat with plain rice then it’s a good idea to make it juicy by adding little water. TIPS to make perfect Egg Bhurji Recipe: To enhance the flavour of the recipe, we have used garam masala powder. If we use pav bhaji spice powder then we get street side flavour. Instead of coriander leaves, we can also use curry leaves to enhance the aroma. We have used both green chillies and red chilli powder, based on your taste buds adjust the spiciness. If you don’t like to add tomatoes to this recipe we can add lemon juice at the end of this recipe. Based on the flavour you like, cooking time varies. If you like to have well cooked and fried, cook for a long time if you like juicy cook based on your liked texture.
