red white and blue jello cups (vegan & gluten-free) Something Vegan

RECIPE Red layer: 2 cups cranberry apple juice (or any red fruit juice) 2 Tbsp. organic sugar 1 tsp. agar powder White layer: 1/2 cup water 1 tsp. agar powder 1 (14 oz.) can coconut milk 1/4 cup organic sugar Blue layer: 2 cups peach mango juice (or any clear-ish juice) 2 Tbsp. organic sugar 1 tsp. agar powder Blue food coloring Vegan whipped cream (I used some by Soyatoo, but you could also make your own) Red, white and blue sprinkles To make the red layer: to a cold pot, add cranberry apple juice, sugar, and agar powder. Whisk well. Heat over medium-high heat. Bring to a simmer, and let simmer 2 minutes—whisking often. Pour evenly into serving containers, and put in the refrigerator to chill about 30 minutes, or until set. To make the white layer: to a cold pot, add water, and agar powder. Whisk well. Add coconut milk, and sugar. Whisk well. Heat over medium-high heat. Bring to a simmer, and let simmer 2 minutes—whisking often. Use a spoon to carefully pour the still warm liquid over the chilled red layer, and put back into the refrigerator to chill another 30 minutes, or until set. To make the blue layer: to a cold pot, add peach mango juice, sugar, and agar powder. Whisk well. Heat over medium-high heat. Bring to a simmer, and let simmer 2 minutes—whisking often. Remove from the heat, add blue food coloring, and whisk well. While still warm, use a spoon to carefully pour the blue liquid over the chilled white layer, and put back in the refrigerator to chill until set (I let them chill for at least an hour before serving to make sure they were thoroughly chilled.) Just before serving, top with vegan whipped cream, and sprinkles. I made four large servings, but you could make several more smaller servings. **You can make this without adding sugar to the fruit juices—it just depends on your tastes and the sweetness of the juices you use.
