You can use mushrooms, eggplant, dairy-free cheese etc. 🥣 Method: Soak 4oz | 120g | 1/2 cup red split lentils in water for 3 hours Combine 5oz | 160g | 2/3 cup oat or buckwheat flour in a mixing bowl ℹ️ You can substitute buckwheat flour for any flour of your choice. ℹ️ You can make homemade oat flour by blending the oats until they form a fine flour. 2tsp baking powder 1/4tsp baking soda salt to taste Rinse lentils with water and drain Add lentils to a blender Add 11fl oz | 350ml | 1.5 cup dairy-free milk and blitz Add lentils mixture to a bowl. Whisk into a creamy batter Set aside for 5 minutes To make the topping chop 1 onion, add 1/4 diced yellow bell pepper, cut 4oz | 100g | 1/2 cup tomatoes and add 2tbsp chopped parsley. Season with 1/2tsp Korean chilli flakes (Gochugaru) and salt to taste. Heat a little oil in a non-stick skillet Pour half a ladle of lentil batter in the centre Top up with vegetable mix and press lentil pancake slightly with a spoon. Fry over medium heat until the base is slightly golden (2-3 minutes) Flip over and fry over medium heat for another 2-3 minutes. Serve hot with a dairy-free yogurt, chutney or sauce of your choice and enjoy!
