Welcome to Foodgasm (Video Number-20) This recipe makes about 15 Cupcakes or 36 Mini Cupcakes. Ingredients: 1. All Purpose Flour- 1 1/3 Cup or 160 Gms 2. Cornstarch- ¼ Cup or 32 Gms 3. Baking Soda- ½ Tsp 4. Cocoa Powder- 4 Tsp 5. Salt- ½ Tsp (if using unsalted butter) 6. Large Eggs- 2 7. Butter- 5 Tbsp or 60 Gms (Don’t use salt if using salted butter) 8. Sugar (fine or powdered)- 1 Cup or 200 Gms 9. Oil- 4 Tbsp or 60 ml 10. Vanilla Extract- 2 Tsp 11. Red Food Color- 1 Tsp(dry) or 1 Tbsp (if using liquid or gel) or more as required 12. White Vinegar- ½ Tsp 13. Buttermilk- ½ Cup or 120 ml Cream Cheese Frosting: 1. Butter- 5 Tbsp or 60 Gms 2. Cream Cheese- ½ Cup or 110 Gms 3. A pinch of Salt 4. Vanilla Extract- 1 Tsp 5. Icing Sugar- 1.5 Cups or 180 Gms Steps: 1. Prepare oven to 180º C and line a muffin tray with cupcake liners. 2. Flour Mix: Whisk together all-purpose flour, corn-starch, baking soda and cocoa powder in a bowl and set aside. (In case you are using unsalted butter, add salt along with other dry ingredients). 3. Egg Whites: Separate egg whites and beat on high speed till soft peaks are formed. 4. Add butter in a bowl and beat till butter turns creamy. This will take about a minute. Add sugar and continue beating till the butter and sugar are mixed thoroughly and a crumb like mixture is formed (approx. 2 minutes). Add oil to the mix and beat for 2 minutes. The consistency of the mixture will not be smooth at this point. Scrape down the sides with a rubber spatula as needed. 5. Add egg yolks as well as vanilla extract and beat till they are combined well into the mix. (approx. 30 seconds) 6. Add red food colour and white vinegar into the mix. Beat to combine. You may add more red colour as required. But add colour in small quantities, beat the batter and check if more colour is required. If yes, add a little more colour and repeat the process. Do not add too much colour in one go. 7. With the mixer on low speed, beat in the flour mix and buttermilk in the prepared mixture by alternatively adding the flour mix (three batches) and buttermilk (two batches), starting and ending with the flour mix. Beat just until incorporated and do not over beat. In the end, scrape down the sides using a rubber spatula but do not overmix. 8. Fold egg whites into the batter using a spatula. It is important not to overmix the batter else the cupcakes will not rise properly and turn hard. 9. Scoop the batter into the cupcake liners filling 1/2 to 2/3rd of the capacity. Tap the tray twice to remove any trapped air bubble. 10. Bake @ 180ºC for 15 mins or till a toothpick inserted in the middle comes out clean. Allow to cool in the tray for few minutes, then transfer to a wire rack to cool down completely. The cupcakes must be cooled down before you start icing them. Cream Cheese Frosting: 1. Add butter and cream cheese to a bowl and beat for a minute, till the mixture turns creamy. 2. Add salt, vanilla extract and icing sugar. Beat till everything is incorporated well. (If the frosting looks too thin, add more sugar by adding 1 tbsp sugar at a time or chill in refrigerator for some time) 3. This frosting usually runs a little thin. So chill it in refrigerator for 20 to 30 minutes before frosting. 4. Fill the cream in a piping bag and pipe it on the cupcakes. Since this frosting runs thin, using a simple piping tip is recommended. 5. In case you don’t have a piping bag and piping tip, simply use any ziplock bag or any plastic pouch. Fill the icing in the bag and push the frosting towards one corner of the bag. Using scissors, cut the corner of the bag to the size of “tip” you want it to be. Keep in mind the corner of the bag will expand into a circle once you cut the corner, so don’t cut it too far up unless you want a huge tip.
